Tasty Bean and Onion Salad

Ingredients:

1/4 cup apple juice

1/2 medium size onion, chopped

1 red onion, sliced

2 medium size carrots, chopped

2 stalks celery, sliced

1/3 cup vinegar

1/2 cup water

1 T sugar

1 T cornstarch

1 beef or vegetable bouillon cube

8 oz. can of red kidney beans

16 oz. can of black beans

Directions:

1. In a large skillet, add apple juice and heat over medium high heat. Add chopped onion, carrots, and sliced celery for two minutes. Remove from heat and let sit.

2. In a small bowl, stir together vinegar, water, sugar, cornstarch, and beef or vegetable bouillon cube. Break down the cube as much as possible.

3. Add this mixture to the skillet. Cook and stir over medium high heat for two minutes, or until mixture is thickened and bubbly.

4. Stir in beans that had been drained. Cook additional 2-3 minutes, stirring occasionally, until mixture is heated through. Garnish with sliced red onions, if desired.

Tasty recipe can be served hot or cold and serves 6.

Note: Add a can or corn or other type of beens can be added or substituted to this mixture as a variation (shown in the photo).
